small amount of cooking oil or fat on the frying/cooking surface. The cooking oil or fat can

cook, must be fried in pans or pots.
D Whilst frying, occasionally add a little cooking oil, so that the food doesn't dry out.
D If, having fried directly on the surface, you want to cook with pots, the surface must first be
thoroughly cleaned.
